when do we use many?
Many: countable nouns.
Countable nouns- we can count these nouns, have a singular and plural form and you can use a number or a/an before the noun.
Examples: 
  • How many grapes did you eat?
  • How many oranges do you need?

When do we use much?
Much: uncountable nouns.
Uncountable nouns- we cannot count these nouns, nouns are always singular and you cannot use a/an or a number before the noun.
Examples: 
  • How much water would you like?
  • I'm sorry but I don't have much time.
