Medieval food did not taste great.
Most of the time meals were made with preserved food. Like salted fish, or dried meat.
To make it somewhat edible, people added spices.

Throughout the medieval times, spices got in Europe using the silk road.
The road was long and unsafe, and that made spices expensive.
In 1453 the prices got even higher, when the Ottomans gained a monopoly on spices.
A monopoly means that they were the only ones trading in spices and they raised the prices.

Why didn't the Europeans go get the spices themselfs?
The maps were not reliable.
People were scared of what might live in the oceans.
