What do you use them for?
We use much and many to say how much you have of something. 

You use many for nouns that you can count (also: countable nouns).
You use much for nouns you cannot count (also: uncountable nouns).

Useful Mnemonic:            Can you say 1 potato, 2 potatoes, 3 potatoes? 
                                                   Can you say 1 water, 2 water, 3 water?

Which one should you use?

Many --> for countable nouns

Much --> for uncountable nouns
