Fusion foods exist due to a global exchange of cultures.  As people travel and interact, their cooking techniques and ingredients may influence other cuisines. 

Tacos al pastor is an example of a fusion food! Let's watch this video to get an idea of how al pastor came to be, and how it is commonly enjoyed today in taco form!
