Countable nouns are nouns you can count:​

Uncountable:

Uncountable nouns are nouns you cannot count:​

One money – two moneys (NOOOOOO!!!)

Countable:

You can use a/an with singular countable nouns.​

A monkey (monkey = countable and singular)

Uncountable:

You cannot use a/an with uncountable nouns.​
